altReaders of our bushcraft blog seem to be very keen jam makers during the jam making season with some of the wild fruits that Mother Nature offers us here in the United Kingdom. In this article we will show you how to make an exceptionally delicious jam using damsons and plums. This is a real treat for the taste buds!

Yesterday I was delighted to have had a relaxed business meeting with a colleague at our stunning woodland site in the glorious Kent countryside. We met in Egerton village with the Land Rover containing a brew kit and, of course, Inca before driving the 12 minutes or so to the secluded location. Once through the gate and driving along the woodland track we started to notice the odd parasol mushroom – this soon turned into seeing thousands of them!

A recent walk with Inca my black Labrador Retriever across the fields near our base here in the glorious countryside of mid Kent led to me finding a late but welcome patch of succulent and ripe blackberries. Armed with a Zebra billy can from the stores we sallied forth with a festive liqueur in mind.

We set off to the farm site for a good early start on what promised to be a gloriously balmy Saturday to prepare for our guests, a Hen Party of eleven ladies who'd come to Kent for the weekend in order to celebrate their friend's forthcoming wedding - and they'd chosen to do so in unusual style - by immersing themselves in a day of hands on Bushcraft and wild food foraging.

altDamsons (Prunus domestica subsp. Insititia) are hanging in large pendulous bunches here in Kent, a real Garden of England for the wild food forager, and in this Badger Bushcraft Wild Food Blog we will be using them to produce one of the best and tastiest hedgerow jams.

Recent inspiration from some friends meant we have decided to make some delicious seasonal fare with the Quince (Cydonia oblong) a pome fruit that looks like a mixture of both an apple and a pear. In this Badger Bushcraft Wild Food Blog we will show you how to make a simple yet scrumptious quince jelly.

The hedgerows of Kent are laden with fruit this year and here at Badger Bushcraft we are making the best of the bounty given to us by Mother Nature. In this Wild Food Blog we will be making whitebeam (Sorbus aria) jelly with the fruits picked locally and the apples from the orchard on our farm site in Egerton.
